Poor yeast management causes off-flavors and quality issues in beer. Breweries can prevent yeast stress through optimal strain selection, propagation control, aeration, temperature regulation, and careful harvesting—ensuring vitality, stability, and superior beer flavor.
Yeast Management is the most neglected activity in most breweries in the world that results in poor beer quality, bad taste, odor and unpleasant smell in beer, yeast management does not always receive the necessary attention in practice. I am very fortunate to have done a few green field and brown field brewery projects in India therefore, I understand how critical and important yeast Management is to improve beer quality in breweries. Most of the problem in breweries is poor yeast management and not properly handling cropping yeast and not properly reconditioning and maintaining yeast in yeast tanks before pitching yeast into fermentor !! What can breweries do to keep the yeast from being stressed!!! Resolve this issue in the brewery.
